Oatmeal Peanut Butter Cookies

It can be a struggle sometimes to make a healthy cookie that the kids will still love. I baked these Oatmeal Peanut Butter cookies tonight after dinner and loved them. I hope your kids will too!

1 1/2 sticks butter
1 cup old-fashioned oats
1 cup + 2 tablespoons all purpose flour
1 tsp. salt
1 tsp. baking soda
1/3 cup sugar
1/2 cup dark brown sugar
1 large egg
1/2 cup chunky peanut butter

Preheat oven to 350 degrees

Melt 1/2 a stick of butter in saucepan then add oats. Cook for 5-7 minutes stirring frequently. Allow the oats to dry on the parchment lined pan you will be using to bake the cookies

Whisk together flour, baking soda and salt. In a separate bowl add remaining butter and both sugars on medium high speed mixer. Add egg and then peanut butter. Then add oats once they have cooled and lastly the flour mixture,

Roll dough into 1 1/2 inch balls and cook for 15 minutes. Eat and enjoy :)

Day 2 Thrifting

Today was the last day of visiting thrift stores with my mom. My daughter decided to tag along as well. We visited two thrift stores. Our first stop was our local Assistance League store. I purchased this cute polka dot dress for my daughter for $6. She tried it on and it fits perfectly. The only other item I picked up at this shop was a microwave egg cooker for 50 cents. Organizing Your Closet

I have not been blessed with a large walk-in closet, but I am able to walk in it so I will not complain. I am not a clothes hoarder, but I do love the thrill of getting something new. About 1/3 of my closet is from the thrift store. (We covered the history of thrift stores for me in a prior post :).

What I am is an organizer. Love things to be neat and streamlined. I know there are others of you out there :) Here are a few of the things I have done in my closet that I have found useful.

Day 1 of Thrifting

Let me tell you, I had grand thrifting plans, boy did I, but things just did not go so well. First, I woke up this morning with a killer headache and an upset stomach. One pill and some cereal and I still was felling sick, but off I went for my 1 hour drive to pick up my mom. We went to lunch and by then I was feeling better.
