Pumpkin Spice Latte Cupcakes

I have been in the baking mood lately and I came across this cupcake recipe I just had to try. Click Here to see the original recipe and write up. I changed a few things.

Cupcakes

2 1/4 cups flour
1 TBL baking powder
1/2 tsp baking soda
1/2 tsp salt
2 TBL pumpkin spice
2 3/4 tsp instant coffee
1/2 cup softened butter
1 1/3 cup sugar
2 eggs
1 cup mashed pumpkin
2/3 cup milk

Mix dry ingredients then mix wet ingredients (except pumpkin & milk) and mix together then add pumpkin & milk. Prepare muffin p...
